Caring for your clay comal is key to unlocking the full potential of traditional Mexican cooking! 🌾 In this video, learn how to properly cure your comal with cal (hydrated lime) to ensure it cooks food evenly and adds incredible flavor over time. 🌶️✨ You can let the comal air dry overnight as opposed to placing it on the stove over low heat. With each use, your comal will only get better—just like the dishes you create on it 👩🏻‍🍳 My clay comal is from @masienda 🤎 #MexicanCuisine #ClayComal

Doña Victoria, the resident clay artisan for the Chatino indigenous community of Tiltepec, utilizes a centuries-old process to craft red earthenware comales from natural, untreated clay. Each comal takes 3-4 days to craft by hand, from the collection of clay to the firing process. Whether you use a comal de barro to cook tortillas (don’t forget a bag of cal to season!), as a beautiful decorative item, or as a serving tray, these pieces of artesanía make for special heirlooms and one-of-a-kind gi

A comal is one of the most basic and most useful tools in a Mexican kitchen. It’s a flat pan used for dry cooking: reheating tortillas, charring tomatoes and chiles, toasting dried chiles, nuts, seeds, and spices. You don’t need one to cook Mexican food, but if you cook tortillas often, it makes life a lot easier. People ask all the time: • Do I need a comal? • Can I use a skillet instead? • What’s the best material? Here’s the honest answer: any flat surface works. A skillet or griddle is fine.

🍫 Make Your Own Chocolate in Oaxaca - Origins: Learn how cacao was sacred to ancient cultures and remains central in Oaxacan life. - Roast: Toast cacao beans on a clay griddle (comal) to release aroma and flavor. - Peel: Remove husks by hand, connecting with the raw ingredient. - Grind: Use a stone metate to mix cacao with sugar, cinnamon, or almonds. - Shape: Form rustic tablets to take home. - Froth & Taste: Whisk chocolate with water or milk using a molinillo—the foam is joy and tradition. ✨
