明蒂的廚房 on Instagram: "常常收到大家的訊息，說雞腿排很難煎，怕裡面不熟、外面燒焦，煎的時候油煙很多，鍋子還有一堆油垢，所以今天特別拍影片跟大家分享控溫的小訣竅。 很多人想要從「塗層鍋」換到「無塗層鍋」，第一個考量點就是「怕不會用、容易沾鍋」，第二個就是「怕用油量大、油煙很多」，今天剛好跟大家分享「不用加油」就可以煎雞腿排。 礙於影片長度，特別補充幾點： 【訣竅1】 中小火熱鍋 厚實的不鏽鋼鍋都會需要一點時間熱鍋，建議開中小火慢慢熱，熱鍋的時候可以去備料，不要為了快速就用大火，空燒鍋子的溫度會飆升很快。 【訣竅2】提早進行灑水測試 新手可以多去感受鍋子的溫度，多灑幾次，慢慢會越抓越精準，如果真的不小心熱過頭，不要急著下油跟食材，關火靜置降溫（或灑一點水降溫更快），再次進行測試。 【訣竅3】全程小火 熱鍋完成後，鍋子充分吸收熱能，由於鍋子散熱速度慢，全程用小火到中小火就足以補充足夠的熱能，不需要用到大火。 【訣竅4】適時關火降溫 煎到快熟的時候，食材表面水分減少，鍋子溫度會快速上升，開始出現大量油煙時就需要「關火」降溫，若沒有出現大量油煙，不需要特別調整火侯，維持即可。這
